Yea but in the grand scheme of things it doesn't really matter since the zombie dragon is more of a threat to her than the other 2.

That was explained. She brought all the Dickless Soldiers and Dothraki because it was a massive show of strength.

Had she just brought one dragon it wouldn't have drawn the attention that bringing 2 instead of 3 brought.

It was not explained. Cersei was speculating about Daenerys' motivations; she had no way of knowing, but the story called for her to guess correctly.
