+1 for Beef Ribs > pork ribs. I like pork ribs, but smoked beef ribs are simply amazing. If smoking I’d rather have pulled pork than pork ribs, but any beef is better. Beef ribs, brisket both > pork shoulder > pork ribs.
That said, the smoked meat rankings are: 1. Brisket 2. Beef Short Ribs 3. Pork Butt 4. Poor man's burnt ends ( chuck roast ) 5. Pork Belly 6. Pork Baby Back Ribs 7. Bacon Wrapped Meatloaf 101. Anything Chicken
Have never done #4.....gotta try on my UDS sometime
Cook at 225 for 9 hrs or so. Cut into big cubes, add more sauce and rub, throw some brown sugar in there, cover in a pan with foil and cook @ 225 for another 90 minutes or so, uncover and cook for 1 more hour at 225. If you can get Painted Hills or some Grass-Fed chucks, they are the best.

Although I'm drinking some low carb alcoholic seltzer right now. Does a man good.

I chose to use it because it reminded me so much of HH degeneracy.
Poor Bull. We've all been there.
