Napoleon Kaufman. Because he's my favorite player,his story of quitting the NFL in his prime to serve God is the most likely to be made into a documentary, and we'd finally settle the nip/nap debate once and for all.

Other interesting narratives:

Bob Sapp - American football to Japanese Superstar.

Anthony Vontoure - Football, mental health, and death in police custody.

Reggie Williams - the rise and fall, where is he now?

Not a documentary but a reenactment of Ty Willingham era by Dave Chappelle.

That year was fun. Went to every game. Was in the locker room when Nueheisal popped off after winning the Rose Bowl. It has sucked ever since that day.
