    I have no respect for people who cook off perfectly fine alcohol when it could be consumed for drunken shenanigan purposes instead.

    Don't worry. I added it at the very end. No alcohol was hurt in the makong of this dish.

    So, the makong chinese food preparation technique = tequila for rice vinegar substitution? Makes sense, dog sense, since the term was first used to describe a taint licking technique from the makong delta, or so I'm told.
