My buddy would take me to Hard Eight BBQ when I'd be in Dallas for bidness. Their sausage and their banana pudding were always awesome.

I grew up in Tennessee and therefore on pulled pork. Took me a while to adapt to brisket but love it now.
Also make sure you try burnt ends at a good BBQ place... -

I fly into San Antonio, then head down to SPI, then up through Port Aransas, Galveston/ Houston, Lafayette (Cajun food time), Dallas, and then down to Austin, and fly out of San Antonio.HoustonHusky said:

You can't go wrong with either.
Also, if you happen to drive through Llano, TX, try Coopers. That was a staple of my youth driving to the deer lease. Always stopped in for a few pounds of brisket for the weekend hunt. You haven't lived, or plugged up your asshole completely, until the only food you ingested for an entire weekend is Coopers brisket and venison jerky from the lease. I didn't shit for a week. When it finally happened, it was like a butthole Guernica.
You owe it to yourself to hit up at least a couple places like Coopers. This place was on the Texas Monthly Best Brisket joints in the 1980's. It's old school BBQ. The new places like Truth and Franklins are undeniably awesome, but places like Coopers set the stage for them. And hell, last I checked the list it was STILL on the Texas Monthly Top 50! Since 1962! Do it, your butthole will thank me.

Rudy’s bbq is great for smoked Turkey. Yes it is in a gas station but it’s legit.
Hard 8 is good. The jalapeño sausage is great. It may or may not be a sexual move as well. -
Thanks again for the tips. In Texas now, been to two so far.
First went to Butters in Mathis. Nice juicy brisket, beef rib, and excellent sides.
Today I hit Bodacious in Longview, which is the Texas Monthly’s #4. Very good. The brisket was juicy, good ribs, and the burnt ends boudin is amazing. Potato salad good, but coleslaw was meh.
Tomorrow I hit up Central Texas. -

Kolaches for the win. So good I missed Louis Mueller today. Never had one before, but they are like the hombows at Pike Place Market, but with a ton of different fillings. Went to Slovacek’s rather than Czech Stop based on the info from my Texas insiders.HoustonHusky said:

R.I.P. John MuellerJohn Mueller, one of Texas’s legendary pitmasters, died this week at the age of 52 in Frisco, as initially reported by Texas Monthly barbecue editor Daniel Vaughn and confirmed by Austin 360.
Mueller had opened and cooked under various ventures throughout his life, but wherever he was, he was known for creating perfect yet simple brisket and hefty tender smoked beef ribs, as well as his signature side, the iconic cheesy squash.
Mueller comes from barbecue royalty; he’s the son of the late Bobby Mueller and grandson of the late Louie Mueller. The family is behind the famous Taylor, Texas, joint Louie Mueller Barbecue, where he started working as young as six years old setting up and cleaning the restaurant. -
