I'll be interested to see how they do this season. Last season strayed pretty far from the books and there isn't much plot development in Feast For Crows and Dance With Dragons for many of the major characters (there is a lot of waling around and thinking about things in those books). There's hardly enough material in those two books for a season of the show.

From what I've read, they're going to expand the roles of several minor characters and add more characters that aren't in the book.

Yes, but its about 2000 pages worth of material. My point being that they were able to stretch 1000 pages of book 3 into two seasons but there I'd hardly enough material in both 4 and 5 combined for 1 season unless you want a whole hour episode of watching Hodor eat with grease spilling down his chin.
