Added sugar I would suspect, as damn near everything you eat other than green vegetables has some kind of sugars in it. Lactose is a fast-metabolising sugar and most people don't even think about it when eating stuff like cheese or sour cream. Fruit sugar, milk sugar, malt sugar - it's not just sucrose or HFCS that's spiking people's blood sugar. Sucrose is just a useless flavor-enhancing addition to foods that adds calories but no nutrition so it's best to avoid it if you can. Ask your dentist.
I have a hella sweet tooth though - and that's a bit of a problem for me being a type 1 diabetic. Sweet things are always so damn delicious. It's a fucking scam, though. Sugar is cheap - good ingredients are expensive - so that's why food companies do what they do.
Usually when I go ‘no sugar’ it’s commensurate with a fast. Even green juice you get sugar spikes, but some how I feel like I remain keto when I do it. So honestly not sure how to measure the trade-offs.
If not explicitly fasting, I consciously cut anything “white” out of the diet - which ends up being most anything that metabolizes as sugar. Not that I’m a drinker but this is also zero alcohol routine - pure sugar.
