I like Coach Lake. I also like how he has no real timetable for naming "starters." By Game 2 or Game 3 or so it should sort itself out, unless it doesn't...

I like Choate. Seems to have intensity but without being a grinding asshole. He's been a DC before and coached ST at Florida. (Checked the SEC stats from last year and Florida was #1 and #2 as far as opponent punt and kick returns.) Linebackers are probably his specialty and he's also coaching the DL. Thats solid experience for a non-coordinator coach. A guy like this can help a lot in defensive & special teams game planning whereas a Johnny Nansen does not.
