We spent five days there in 2018 off-season (ILTCIOS, IWILTD) and really enjoyed it. First and only tim we have done the tour-group thing, and saw a lot of great stuff, even though it was a once-a century high tide, paired with a big storm, and it was flooded. We bought hip waders, and walked around on a lot of scaffolding. Some stuff was closed because of it, but we went to St. Mark's at midnight for a special small group tour. I couldn't imagine going in the summer with all the tourists...
EDIT: Re-reading this, it sounds like a shit-tier level trip, but it really wasn't bad at all...
My daughter just finished a two month summer program in Italy and visited Venice one weekend. She said she’s glad she went and will probably never go again.

Didn’t really feel like I missed much either.
