Low and slow in a smokerPut it in a salt brine five days prior in the fridge and let it defrost in it.
Cook it at 180 for two hours uncovered to get a good smoke ring. Foil it and increase temp to 225 until the internal temp is safe. Take it out of the foil, remove the skin over the breast and run it for 30 minutes on 180.
Foil it again and wrap it in a towel until you are ready to serve it. Birds don't get better or worse with rest.
