I have never understood the obsession with Nike. Kids don't see Nike and think Oregon. They do see Oregon and think NIke. Oregon has leveraged that connection well. If UW marketing wasn't CrazyLarryFS they could leverage Nike much better than they have.

Easy. Most programs go with the highest bidder, because most programs don't identify Oregon as their chief rival. I suspect UA can only afford to outbid Nike in a few places. Adidas is bigger but just appears to have a different collegiate marketing strategy: instead of being everywhere, they seem happy outfitting just a small number of higher profile schools. (Memo to UW: Win games, get on natl TV, and watch outfitters try harder to compete for your business.)
