The video the authorities don't want released out of security concerns can still be reviewed by a judge in camera and any potentially exculpatory evidence, if there actually is any, can be provided to the defense. So far we've seen some defendants claim they peacefully entered only to be contradicted by video evidence showing that they clearly did not.

I know you prefer to believe that the easily "caught up in the moment" are victims of evidence suppression. But it's an implausible notion, at best.

The easily "caught up in the moment" have attorneys. They can go ahead and seek production of the videos if they think it's BS. And in any event, they are entitled to any exculpatory evidence even if there are security concerns. But remember, if there's already video of the defendant committing a crime, it's hard to find a video of him uncommitting that crime.
