You adjust. Just like we've done in the 200 years since the Industrial Revolution. Even in your ridiculous hypothetical, if surgeons and dentists are being replaced by robots, workers will become retrained to learn how to program and maintain those robots. There will always be jobs available, they're just constantly changing.
