Since HH doesn't have a travel/food bored (ala Surly Horns a.k.a. Shaggybevo RIP) I am posting this thread here.
What is your go to recipe for duck?

I smoked a duck for the game in 2016. Can't remember the exact recipe but I think it had a maple syrup and brown sugar glaze. Lemme see if I can find some pictures.

Duck wraps.
Brine a fresh quartered Duck. MArinate in your favorite marinate. Cut the duck quarters into bite size nuggets. Wrap duck nuggets with cream cheese, small jalepeno and Water chest nut with good quality bacon. Grill duck wraps to medium or tenderness.
When done, take off the grill, unwrap the duck, throw the shitty duck away, eat the rest.

This reminds me of my father-in-law's recipe for wild turkey. You take the breasts off the wild turkey and put them on Alder planks. Cook until done. Take the golden brown wild turkey breasts off the plank and throw them in the garbage. Eat the plank.SECDAWG said:Duck wraps.
