If this guy really emphasizes nutritionists, the two vegetables that they want you to include with any other diet is cucumbers and celery. Even if you eat no other vegetables. They have properties that add water to the GI tract and repair it, it goes beyond just nutrients/fiber.

The counter-argument about plant nutrients is that just because they aren't essential, doesn't mean they aren't good for you. Agree with what I think he's implying that toxins frim plants can offset that wrt inflammation.
damn you assholes, I decided to give celery and PB a try again since tastes etc change over time. It was tolerable. Bearable, even. It required the GOOD PB too

These are all good uses. Celery's taste is pretty inoffensive and makes it a great veggie version of a tortilla chip for dipping.

celery is the tofu of the vegetable category. Doesn’t really taste like anything… just takes on whatever you use it with.
Hummus or guacamole (has to be spicy) another good pairing.
