After having gone to my sister-in-laws for the past few years they are COVID scared so now we’re on our own. That means firing up the smoker to see what happens.

I decided to smoke that fucker. Dry brined the bird (14lbs) on Monday. Aiming for 250 for 7 hours. Hickory chunks with briquettes. We’ll see what happens. Aiming for some axual flavour and moisture on this thing instead of having to cover it in gravy to get any taste. We’ll see.
